Ingredients

  • Bell Peppers: 4 large, halved and seeds removed (any color)
  • Cheese Factory Diced Mozzarella: 1 cup
  • Olive Oil: 1 tbsp
  • Onion: 1/2 cup, finely chopped
  • Garlic: 2 cloves, minced
  • Cooked Rice or Quinoa: 1 cup
  • Vegetables:
    • Corn Kernels: 1/2 cup
    • Zucchini: 1/2 cup, diced
    • Tomatoes: 1/2 cup, diced
  • Seasonings:
    • Italian Seasoning: 1 tsp
    • Salt and Pepper: To taste
  • Fresh Parsley or Basil: Chopped, for garnish

Instructions

Step 1: Prepare the Bell Peppers

  1. Preheat your oven to 375°F (190°C).
  2. Place the halved bell peppers in a baking dish, drizzle with olive oil, and bake for about 10 minutes to soften slightly.

Step 2: Make the Filling

  1. In a skillet, heat the olive oil over medium heat.
